HVAC and industrial refrigeration technical service for Agrovin wineries

The challenge

Wineries in the Valencian Community operate in a demanding climate, with outdoor temperatures exceeding 40 C in summer. Producing quality wines requires rigorous thermal control across all phases of the process: alcoholic fermentation needs stable temperatures between 14 C and 28 C depending on the grape variety, and barrel ageing requires between 12 C and 16 C with relative humidity controlled at 70-80%.

Agrovin, a leader in oenology and winemaking technology, needed a technical partner capable of providing comprehensive HVAC and industrial refrigeration services to their winery clients. Equipment had to operate with extreme reliability during the grape harvest, the peak demand period, when a stoppage could compromise an entire vintage.

The added challenge was the need to achieve glycol water temperatures down to -10 C for fermentation control in stainless steel tanks, a range that places the installations at the boundary between conventional HVAC and industrial refrigeration, requiring technical expertise in both disciplines.

The solution

Acoval provides comprehensive technical service to Agrovin for their HVAC and industrial refrigeration installations in wineries. We work with low-temperature (LT) water chillers capable of producing glycol water at -10 C, using food-grade propylene glycol mixtures as the secondary fluid in fermentation control circuits.

The design incorporates zone-by-zone control: each tank or room in the winery has independent temperature regulation. Barrel ageing rooms feature climate control systems with humidity control, maintaining ideal conditions for wine evolution without excessive evaporation losses (the so-called “angel’s share”).

Our technical team carries out scheduled preventive maintenance before each harvest, verifying compressor operation, refrigerant levels, glycol circuit condition and temperature probe calibration. During the harvest campaign, a priority response protocol is activated with response times under 4 hours. This service model has enabled Agrovin’s winery clients to operate without interruptions for the last five consecutive seasons.
